This case study looks at how x-ray technology from METTLER TOLEDO Safeline has helped Dutch bakery - De Ruiter’s Bakkerij - meet rising production demands and secure new business. It considers how, as a family-run bakery, brand protection is especially important and installing two x-ray systems to the end of its cookie production lines, has given the De Ruiter family the necessary tools to identify undesirable variations in density caused by contaminants, in addition to sugar clumps – a particularly desirable variation in product density that helps give its speculaas cookies their inviting crunchiness.
